Tomato Risotto with Peas and Ham

Serves: 4

Ingredients Tomato Risotto with Peas and Ham
  • 1 cup medium-grain rice, uncooked
  • 14 ounces can diced tomatoes with italian herbs & garlic
  • 3 tablespoons tomato paste
  • 5 slices lowfat ham
  • 1 1/2 cups frozen peas
  • 3 1/2 cups water
  • 2 tablespoons grated parmesan cheese

Preparation
  1. Combine all ingredients together except cheese in shallow microwaveable container.
  2. Cover and microwave on high for 35-45 minutes or until rice is tender, stirring occasionally.
  3. When done, stir well and allow to sit for 3 minutes. Serve each portion with 1/2 tablespoon Parmesan cheese.
  4. Serving suggestion: Tossed green salad.
